We're doing the barbecue thing today with family. The weather is holding, for once. After a month of near solid rain, the sun is nice. Me, I'm having a bout of vertigo, which is annoying. Started yesterday. Whenever I change direction quickly, or get up from lying down, everything spins. :P Luckily it doesn't bother me if I just sit here.

I baked a pie. Don't know how it is yet as it's for dessert tonight, but I'm noting down what I did in case it turns out well. I think it might be a little too sweet, but that's because the berries were quite sweet and not at all tart.


blueberry pie

1 - 10" deep dish pie pan
Preheat oven to 425°F

Make a double pie crust:
280g flour
1/8 tsp salt
5tbsp butter
2/3c veg shortening
6-8tbsp water

cut the fats into the flour and salt, and then stir in the water until it all comes together. Roll out about 2/3 of it on a floured board and line the pie tin. Chill it all while doing the rest.

Filling:
3.5-4 pints fresh blueberries
3tbsp corn starch
juice and zest of half a large lemon
1/4c water
1tsp vanilla

Now, I did this like cobbler filling. I mixed the sugar and cornstarch together in a pot, added the water and the lemon zest and vanilla and brought it to a boil. Then I turned it down, added the fruit and stirred it until it was all coated, added the lemon juice, and stirred it again. An easier way to do this would be to leave out the water, mix everything together and pour it all into the pie shell.

Roll out the rest of the crust and cut it into strips and lattice the top of the pie. I was too lazy to lattice properly, so I did this triangular thingy.

Place the pie on a baking sheet because it *will* spill over, and bake 10min, turn it down to 400°F and bake 30min, and then turn it down to 350°F and bake it for another 20m. Or so. I could have started it at 400 and then just turned it down to 350 half way. Basically, bake it about an hour, when the top is golden brown and the filling is bubbling. The filling has to be bubbling, though.

Let it cool overnight before cutting to let the filling set.


Meanwhile, I have a gecko sitting on my stomach, and I should put the rabbits out for a bit of a run....
